This Tuesday's menu is gluten-free and built around slow carbohydrates, rich in protein and healthy fats from legumes, nuts and whole-grain rice.
Well suited for both bodybuilders and longevity enthusiasts. One exception: the pomegranate molasses in Fesenjaan contains a small amount of fast carbohydrates (concentrated fruit sugar), used as a flavoring in the sauce.
Kashke Bademjaan: A creamy, deeply flavorful Persian classic made from roasted aubergines, caramelized onions, garlic and walnuts, seasoned with fresh and dried herbs. Topped with "kashk", a vegan crème fraîche with a touch of white miso, capturing the deep, fermented flavor that traditional kashk is known for, and garnished with freshly grated lemon zest.
Sabzi Polo: Persian herb rice made with whole-grain brown basmati rice, packed with dill, cilantro and parsley, with black beans and lentils added for protein and heartiness. (Disclaimer: whole-grain rice doesn't taste quite like traditional white basmati.)
Fesenjaan: A rich and festive stew of ground walnuts, slow-simmered with pomegranate molasses into a thick, sweet-tart sauce. Lentils and hard-seared shredded mushrooms add heartiness and a tender, pulled texture reminiscent of the original chicken or duck. Garnished with fresh pomegranate seeds.
Saalaat Shirazi: A finely chopped, refreshing salad of tomato, cucumber and onion, topped with lemon juice and olive oil. The classic companion to any Persian meal.
Maast-o Khiar – Dessert: Cool vegan Greek-style yogurt stirred with cucumber, green raisins, lemon juice and chopped walnuts. Garnished with fresh pomegranate seeds.
Please note: Maast-o Khiar is served as the dessert and requires a separate dessert ticket.
Sekanjabin: A sweetened vinegar syrup infused with fresh mint and mixed with lemon-flavored sparkling water. Made with raw, unfiltered apple cider vinegar instead of white wine vinegar. Some smaller studies suggest that vinegar in small amounts may have a mild effect on post-meal blood sugar stability, though the evidence is limited.
