Summer is taking its time in Copenhagen, so we’re calling it in with flavors and rituals from around the world. This week, we’re taking you to the whitewashed streets of Andalusia, Spain! 🇪🇸
Salmorejo is a refreshing and creamy Spanish summer soup made from ripe tomatoes 🍅, garlic 🧄, olive oil, and day-old bread, blended to silky perfection, topped with crispy fried walnuts and olives 🫒 for a savory twist, and served alongside warm garlic bread. 🥖
But did you know that salmorejo wasn't always a tomato soup? Originally, the word referred to a marinade of water, vinegar, salt 🧂, and oil, used for seasoning until in the 17th century tomatoes entered the scene from the Americas, transforming this rustic sauce into what food historians call a “transitional soup” between the Old and New Worlds. 🌎
This nourishing dish born of necessity, once cherished by farmers and harvesters, but now celebrated for its healthfulness and heritage will be brought to you by our volunteer chef Sabina 👩🍳 who had her debut just two weeks ago and the rest of our dedicated team of volunteers! 🌞
