KW Folkekøkken: Ethiopian Injera, Tumtumo & Alicha

As another season of our community kitchen comes to a close, we’re ending on a flavorful high note with a special evening hosted by our old-time volunteer and professional chef, Alem. 🤩 Together with our ever-amazing kitchen crew she’ll be serving a heartfelt tribute to her native Ethiopian cuisine. 🥰

At the center of the table will be injera (እንጀራ), sourdough flatbread 🫓 made from teff flour, known for its soft, spongy texture and tangy flavor. With this edible canvas, you’ll find tumtumo (ቱምቱሞ), a velvety red lentil stew 🍲 gently simmered with aromatic berbere (በርበሬ), the signature Ethiopian spice blend that brings warmth 🔥 and complexity; and alicha (አልጫ), a comforting medley of vegetables cooked with turmeric and subtle spices. 😋

Let’s come together to mark the end of a beautiful season, celebrating the people we've shared meals with, the new friendships formed and the flavors explored. 🤗 And of course, here’s to the many more we’ll share in the seasons ahead. 🥂
